Egg Pizza

Ingredients....


[1] 6 Eggs.
[2] 1 medium Potato.
[3] 1 medium Red Onion.
[4] 1/2 Red Capsicum cut into thin strips.
[5] 1/2 Green Capsicum cut into thin strips.
[6] 3 Green Chillies, chopped.
[7] 1 clove of Garlic, crushed.
[8] A handful of Coriander leaves, chopped.
[9] 2 tbsp Lime Juice.
[10] 2 tbsp Butter.
[11] 1/2 cup grated Cheese.
[12] 2 big Tomatoes, cut into rings.
[13] Salt.


Method...


1. Boil the potato and remove skin. Cut into cubes
Cut half of the onion in rings and chop the remaining half

2. Heat a pan and melt butter; fry chopped onions till soft and add chopped chillies and crushed garlic.

3. After a minute, add potatoes and capsicum. Fry for two minutes and season with salt. Finally, add the lime juice and chopped coriander.

4. In a bowl, beat the eggs and season. Add the cooked vegetables in it. Pour this into a greased dish with raised sides. Place it under a hot grill for 3 minutes or until set.

5. Take the dish out and layer the tomato rings and onion rings on top. Sprinkle the cheese on top and bake for 3-5 minutes more.

6. Take out the dish and allow 5 minutes before you cut it into wedges. Enjoy your egg pizza.
