Caribbean Lime Chicken

Ingredients ...


[1] 1 lime.
[2] 2 tb dark rum or orange juice.
[3] 2 tb molasses.
[4] 1 tb hot pepper sauce (or to taste).
[5] 4 chicken pieces (breasts,thighs or; legs).
[6] 2 tb oil.
[7] 1 lg onion; chopped.
[8] 2 cl garlic; minced.
[9] 2 tb ginger root, fresh; minced.
[10] 16 oz tomatoes (1 can).
[11] 1 cinnamon stick.
[12] 2 md bananas.
[13] 1 hot cooked rice.


Instructions ....


Cut the lime in half and squeeze, reserving the juice. Remove the peel fromthe lime and cut away the bitter white pith. Mince the peel and combine thejuice, rum, molasses and hot pepper sauce.
If you have time, marinate the chicken in the juice for up to 24 hours.
Drain, reserving marinade..
Heat the oil in a large skillet and cook the chicken until lightly browned.

Add the onion, garlic and ginger and continue to cook until the onion is
translucent and beginning to brown. Add the tomatoes, cinnamon stick and,
lime juice mixture to the pan. Cover, reduce heat to low and cook until the
chicken is done, about 45 minutes.

Peel and cut the banana into thick, diagonal slices and put in the skilletwith the chicken. Cover and cook for a minute or two, just until thebananas are warm. Serve with rice...
