Chicken With Herbal Dry Rub


Ingredients ....
[1] 2 tb dried oregano.
[2] 2 tb dried purple basil.
[3] 2 tb thyme.
[4] 1 tb dried sage pn lavender coarse sea salt.
[5] 3 lb roasting chicken; (to 4 -pounds).
Instructions ....
Combine the dried herbs, salt, and pepper in a small food processor orspice grinder. Pulse until finely ground. Rub the mixture all over thechicken, to completely season and coat.
Place the chicken on the rotisserie. Place over the prepared coals. Roastuntil the juices run clear when tested with a two-pronged fork and aninstant-read thermometer reads 165ΓΈ when inserted into the thickest part ofthe thigh, about 2 hours....
